Chuck Norris's Big Day at the Dojo

Today was the Tournament of Champions at the Downham Dojo in Paradise. My son, Chuck Norris (No, not that Chuck Norris!), went for the very first time. Since he is fairly new to karate and only has his orange belt, he didn't know what to expect, but just went to have fun. There were tons of people there and all the seats were taken. I found a little corner to stand in and take pictures.

I got to see Chuck win 1st place in the kata performance in his division. He also won 3rd in the weapons using the staff. His final award was first place in the individual sparring. He beat his buddy, Charles, who is a purple belt.

Unexpected Guests

About lunch time today, we had a good-looking couple come to visit us. They didn't come inside, just hung around the front yard. The Barker, Underdog and Mighty Mouse wanted to go out and say hi, but we didn't allow it since our guests didn't seem like dog people.

I must say that they weren't very sociable. They just ate and left. Then we found out that they just went to our next door neighbor's house to eat too. And not even a thank you note or anything!

Award Winning White Chicken Chili with Secret Spices

Hey! I won third place in the ward chili cook-off tonight! Woohoo! Here is the recipe:

White Chicken Chili with Secret Spices

5-6 chicken breasts
3 cans chicken broth
1 can cream of chicken soup
1 7 oz can mild green chilies, chopped
1 can white beans, drained
1 can white beans, drained and mashed
2 cans white kidney beans (cannellini), drained
1/2 c. instant mashed potatoes (dry)
1 tsp. black pepper
1 tsp. nutmeg
1 tsp. cinnamon
1 Tbls. cumin

In a large pot, combine the chicken and broth. Bring to a simmer and cook until the chicken shreds easily. Remove chicken from the pot and shred with two forks. Return chicken to the pot. Add remaining ingredients and simmer 1/2 hour. Adjust seasoning to taste. This is even better the second day!
